Beetroot Chia Parfait

Ingredients
  • 3 cups almond milk
  • ¾ cup chia seeds
  • 1 tablespoon agave nectar
  • 1½ teaspoons of vanilla extract
  • 1 teaspoon of cinnamon
  • 1 teaspoon of beet root powder
  • Yogurt (I like using Greek vanilla)
  • Granola
  • Cherries, pitted and halved
Instructions
  1. Combine all ingredients into a bowl and stir to combine.
  2. Place in the refrigerator for at least 1 hour
  3. To assemble your parfait: Place 2 tablespoons of the chia pudding in a glass. Top with 2 tablespoons of yogurt. Continue this pattern until you get close to the top. Then add granola, and cherries. Enjoy!
