Pretty in Pink Parfaits

Ingredients
  • 2 cups oats
  • ½ cup grain blend (I used the Super Seed & Ancient Grain Blend from Trader Joes)
  • Pinch of salt
  • ¼ cup agave syrup
  • ¼ cup sunflower seed oil
  • 1 tablespoon date syrup (I used Just Date Syrup)
  • 1 teaspoon vanilla
  • 1 tablespoon beet powder
Instructions
  1. Preheat oven to 325 degrees
  2. In a large bowl, toss together the oats, grain blend, and salt. Set aside.
  3. In a small bowl, combine the agave syrup, sunflower seed oil, date syrup, vanilla, and beet powder.
  4. Pour the agave syrup mixture over the oat & grain mixture. Toss together to combine.
  5. Pour the oats onto a rimmed baking sheet lined with parchment paper in a single layer and leave at least a half inch around the edges. Bake for 16-18 minutes, stirring once gently.
  6. Let cool completely on the sheet pan. Once cooled, pour into a bowl or storage container. Add the dehydrated strawberries & raspberries. Toss to combine.
  7. Build your parfaits in small juice glasses layering the Greek yogurt and the granola.
  8. Serve with any other desired toppings such as fresh fruit, cocoa nibs, chopped nuts, date syrup, or edible rose petals.
Notes
If you don't have date syrup, substitute with another tablespoon of agave syrup.
If you cannot find the Trader Joes Super Seed & Ancient Grain Blend, substitute with flax seed, chia seed, quinoa, mullet or even chopped nuts (such as almonds or walnuts).
